Snails
Our Snails are sourced from a farm hidden in the hills. The Snails roam freely in a large netted area where they benefit from the gentle climate of Gascony.
The Snails are nurtured with a special formula known only to the farmer who feeds his 'pets' lovingly each day. The result is huge, tender, juicy Snails, larger than you will have seen before. Not only that but the Snails are full of flavour, resulting from their special diet. Try the escargotine (garlic, parsley and snail pâté), snail confit (heat through and serve with a salad or sauté potatoes, snails in a spicy sauce or just prepared in a court bouillon for you to add your own garlic butter. Yum!
